Spicy Seared Baja Bowl
Ingredients
- 1 cup dry brown rice
- 1 can diced tomatoes or 10 oz fresh tomatoes
- 1 chicken breast about 10 oz
- 1/2 cup yellow and/or white corn
- 1 yellow onion
- 2 cloves garlic
- 1 ripe avocado
- 1 tbsp olive oil or butter
For Seasoning:
- 1 tbsp chicken or tomato bouillon powder
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1 tsp oregano
- 1 tbsp salt
- 1 tsp black pepper
Instructions
- Start by preparing the rice per package directions, with one caveat. Use about 4 oz less water than the directions call for, and throw in the whole can of tomatoes instead. I prefer Minute rice for ease or RightRice for extra protein, but you can use whichever you prefer.
- Chop the onions and garlic. Halve your avocado and cube it. Set aside.
- Pat the chicken dry and season with salt, cayenne pepper, oregano, and garlic powder on both sides. Melt 1 tablespoon of olive oil or butter in a frying pan on high heat.
- Once the oil is hot, add the chicken breast to the pan, and cook about 3-5 minutes on each side, until golden brown and fully cooked through. Slice thinly and set aside.
- Reduce the heat to medium, and add more oil to the skillet if necessary. Then add the diced onions, garlic, and corn. Season to taste, and cook 5 minutes, stirring occasionally.
- Once the rice is done cooking, fluff with a fork and add in the bouillon powder. Season with salt and pepper to taste. Mix well.
- Assemble your bowls, starting with the rice, then veggies. Top with seared chicken and avocado. Enjoy!
