  • 1 cup cooked rice and quinoa blend or ancient grain blend
  • 1 ripe avocado sliced
  • 1 cup cherry tomatoes halved
  • 1/2 small red onion thinly sliced
  • 1 cup cooked corn kernels fresh, frozen, or canned
  • Feta cheese for topping optional
  • Fresh cilantro or parsley for garnish
  • Lime wedges for serving (optional)

Chimichurri Sauce:

  • 1 cup fresh parsley leaves packed
  • 1/4 cup fresh oregano leaves packed
  • 3 garlic cloves
  • 1/4 cup red wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/2 teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste

Instructions
