Ingredients
- 3 large russet potatoes peeled and diced
- 1 medium-sized cauliflower chopped into florets
- 1 cup half and half
- 4 cups vegetable broth
- 2 green onions finely chopped (for garnish)
- 1 yellow onion diced
- 2 carrots peeled and sliced
- 1 teaspoon thyme fresh or dried
- Salt and pepper to taste
