Berry Greek Yogurt Bark

A simple, high-protein frozen snack made with Greek yogurt, fresh berries, granola, and almonds. This recipe is perfect for using up extra berries and makes a refreshing, energizing option for breakfast, snack, or dessert.

Ingredients
  

  • 2 cups Greek yogurt plain, vanilla, or strawberry — your choice
  • 1 scoop vanilla protein powder optional, but recommended for extra protein
  • 1-2 tbsp honey plus more for drizzling
  • 1/2 cup strawberries chopped
  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 1/4 cup granola
  • 2 tbsp sliced almonds or any nuts you prefer
  • Lemon zest optional, for extra brightness
  • Optional: 2-4 tbsp cottage cheese softened, for a creamier cheesecake-style base

Instructions
 

  • In a medium bowl, stir together the Greek yogurt, protein powder, honey, and cottage cheese (if using) until smooth and creamy. Taste and adjust sweetness as needed with a little more honey.
  • Line a baking sheet with wax paper or parchment paper.
  • Spread the yogurt mixture evenly across the lined pan using a spoon or spatula. Aim for about 1/4 to 1/2 inch thickness.
  • Scatter the berries, granola, and almonds over the yogurt base. Sprinkle with lemon zest if desired, and finish with a light drizzle of honey on top.
  • Place the baking sheet in the freezer for 3-4 hours, or until fully set and firm.
  • Once frozen solid, break the bark into pieces of your preferred size.
  • Keep stored in a freezer-safe container or zip-top bag in the freezer until ready to eat.

Notes

Customize It: Use any combination of berries or fruit you have on hand. You can even blend fruit into the yogurt base for more color and flavor.
Protein Options: Vanilla protein powder pairs well with the flavors here, but you can skip it if you prefer.
Serving Tip: Let a piece sit out for a minute or two to soften slightly for the best creamy texture.
Storage: Best stored in the freezer for up to 3 months.
