A New Take On Pizza
I’ve made this tortilla pizza more times than I can count. It’s so easy and tasty, you might find yourself making it multiple times a week. Don’t say I didn’t warn you.
A pizza made on a whole-wheat tortilla is a healthier alternative to a traditional pizza, and so much easier and faster to make. The crust is thin and crispy, with a slightly nutty flavor from the whole wheat. The tortilla is topped with flavorful tomato sauce, melted mozzarella cheese, and your choice of toppings such as fresh vegetables, herbs, and meats. It’s a quick and easy way to satisfy your pizza cravings in a light and easy lunch recipe. Plus, the whole-wheat tortilla adds fiber and nutrients to your meal.
The secret to getting the tortilla nice and crispy instead of soggy is by lightly coating each side with olive oil. Then you lay on your pure tomato sauce, garlic, onions, and mushrooms, then the cheese. That’s right, we put the toppings under the cheese for maximum flavor. That’s a little Chicago tavern secret from me to you. Then I like to add spinach and red pepper flakes, and bake until golden brown and crispy for a perfect, well-balanced lunch. I also like to add ground sausage from time to time. My stomach is growling just thinking about it.

This recipe is for a single-serving, but you can easily make these for the whole family. Especially if you’re opening a can of tomato sauce, you’ll have plenty leftover for later in the week or for multiple pizzas. I wouldn’t store leftovers here. It’s so easy and quick to make, that you won’t really need to.

Light & Easy Tortilla Pizza
Ingredients
- 1 whole-wheat tortilla
- 2 tablespoons pure tomato sauce from the can, not the jar
- 1 tablespoon olive oil
- 1 garlic clove minced
- 1/4 cup diced onions
- 1/4 cup sliced mushrooms
- 1/4 cup shredded parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Optional toppings: fresh spinach, red pepper flakes, cooked sausage, black olives, red peppers, cherry tomatoes, etc.
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Lightly coat each side of the whole-wheat tortilla with olive oil.
- Spread the pure tomato sauce evenly over the tortilla. Don’t add too much here, or it could make your pizza soggy.
- Sprinkle minced garlic, diced onions, and sliced mushrooms on top of the tomato sauce.
- Add your choice of toppings, such as fresh spinach, red pepper flakes, or cooked sausage.
- Sprinkle the shredded mozzarella cheese over the toppings.
- Bake the tortilla pizza in the preheated oven for 10-12 minutes until the cheese is melted and bubbly and the tortilla is crispy and golden brown.
- Remove from the oven and let the pizza cool for a few minutes.
- Cut the tortilla pizza into slices and serve immediately.
