How to Customize Your Frozen Greek Yogurt Bark
One of the best things about this Berry Greek Yogurt Bark is how easy it is to make it your own. You can get creative with whatever you have on hand — no need to stick to just one version. In fact, I made two different flavors in one batch because I couldn’t decide! It’s easy to break the bark in half once frozen and then freeze separately for some variety when you go to snack on it.
For one half, I used strawberry Greek yogurt as the base and topped it with fresh strawberries and blueberries — super simple, classic, and fruity.
For the other half, I mixed plain Greek yogurt with a little whipped cottage cheese to create a blueberry lemon cheesecake, then added blueberries, blackberries, and a sprinkle of lemon zest on top.
Feel free to switch up the berries or even add other fruits you need to use up. You could blend some fruit right into the yogurt for a more flavorful, colorful base, or keep it simple and let the toppings shine.
No matter how you customize it, this frozen yogurt bark is an easy way to use up extra fruit and create a healthy, protein-packed snack you’ll actually want to eat.

These are the two variations of this bark I made. On the left, blueberry lemon cheesecake. On the right, strawberry and blackberry parfait. You can use whatever berries and flavors you like to make this truly your own.
How to Make Berry Greek Yogurt Bark
The beauty of this recipe is how effortlessly simple it is — no baking, no fancy equipment, and no stress. Just a little mixing, a little sprinkling, and a little patience while it sets in the freezer.
I like to start by mixing up my Greek yogurt base in a big bowl. I stir in a scoop of vanilla protein powder to give it that extra boost of staying power, especially if I’m planning to grab a piece before a workout or as a late-morning snack. Depending on the flavor I’m going for, I’ll sometimes add a splash of vanilla extract, a little lemon zest, or even a spoonful of cream cheese for that creamy cheesecake vibe. You can really make it your own here — it’s hard to go wrong.
Once the base is smooth and creamy, I cover a baking sheet with wax paper to keep cleanup easy and make sure the bark will lift right off later. Then I spread the yogurt mixture out with the back of a spoon or spatula. You don’t need to worry about getting it perfect — rustic is part of the charm.
Now comes the fun part: toppings. I scatter a generous handful of chopped berries across the surface — whatever I’ve got that needs using up. Granola goes on next for a little crunch, along with some sliced almonds (or whatever nuts you like). Finally, I finish with a light drizzle of honey over the top for that perfect touch of sweetness.

After that, it’s just a matter of patience. I pop the whole tray in the freezer and let it do its thing until everything is set and solid. Once it’s frozen through, I break it up into pieces — some big, some small — and store them in a container in the freezer so I’ve always got an easy, protein-packed snack ready to grab.
It’s one of those recipes that feels like a treat but secretly helps you hit your protein goals — and saves those almost-too-ripe berries from going to waste.
